What about animal products
As far as I know there has never been any consensus on any gathering that
everything has to be purely vegan, or even vegetarian. On some gatherings there is a fish (sometimes self-caught) or meat dish for those who want it. Of course it is always possible that sometimes the organizers have consensus that on that particular gathering, there will be no meat or fish prepared.
Fish and meat
Though, especially with fish, many people (especially in the north and the western coasts of Europe) seem to join in when it's there, there is often discussion whether or not this can be bought from the Magick Hat.
A more important thing is that some frying material (especially cast iron / SV gjutjärn / SF valurautainen) could take up the (animal) grease, so the pot isn't fit for strict vegans / vegetarians any more.
It is of course very difficult to keep meat really fresh in camp conditions, which was originally the reason that it's hardly used in any camp-kitchen. The vegetarianist reasons came later. But humans have managed to keep meat and fish for thousands of years quite cool, so it is possible.
Milk-products and (happy, free-range) eggs
These can be used on some gatherings, though never in the main dishes, which are, as far as I know, always vegan, so everyone can eat them. But side-dishes with eggs or yoghurt could be made, especially if there is a vegan variety of the same dish.
Always serve the non-vegan variety first. Otherwise everybody takes from the vegan variety (not knowing that there is a non-vegan one, or seeing that it is served still too far away).
A cool/cold storage place
Animal products and also mushrooms especially need to be stored cool or even cold.
- Sometimes there is a grotto in the site, sometimes there is a food-cellar.
- If there isn't you can dig a hole in the ground, best in a shadow area, of about 1-1.5 metre deep, and make a cover with plastic bags and moss. Moss tends to be a good insulation material.
- Put a bucket or a tub in the river or the lake if you have one, make it heavy enough with rocks, to prevent it from floating away, and put your products in it. Water is always quite cool, especially in a glacier stream.
- In some Nordic or mountain areas you can find ice/snow, even in summer, in some caves. Cut out some ice/snow and bring it to the kitchen/food area, dig a hole in the ground, make a wall inside the hole, with the ice/snow and cover it with plenty of moss. In Norway we managed once to keep fish not only cold, but frozen for some days, though it was very sunny (24 hours a day !!)
